Ridiculously Easy Lemon Pastries

I love the Artisan Bread in Five Minutes a Day series. It's got to be my number one favorite cookbook, and the fact that I actually COOK out of it tells you how good it is. Normally, I just read them for ideas and pass them on.

Well, I made my husband some lemon pastries this evening.

I have to say they are pretty darn amazing, even though the picture is a little funky.
So, here's what I did:

I took this recipe, added the juice of one lemon to the pastry cream, got rid of the apricots, and sprinkled the finished product with freshly grated lemon zest.

Heaven.
