This is not one of those times.
I received a lovely 32 ounce jar of Tropical Traditions coconut oil for review, and it truly was just a treat to work with. It's about half way gone now, and I've gotten a good feel for the product and how it works in various recipes. It's really just phenomenal. The best thing about it, to me, is just the lovely scent when I warmed it. Breathing deeply, eyes closed, it made me feel like I was on a tropical island instead of my snow covered kitchen. I love that. I also love the fact that it's nutritious. It's food. Three and a half tablespoons of virgin coconut oil contains the same amount of lauric acid that a breastfeeding child would receive from nursing.
Do you see why I lack funny words for this stuff? It's too good to laugh about! Nutritious, organic, family owned, sustainable practices, if I was going to invent a company in my head that stood for everything I wanted to spend my money on, this would be the one.
And yes, people, the price is reasonable. As I'm poking around their site right now, I'm amazed at the amount of things on clearance. Little red numbers everywhere! You know I LOVE, LOVE, LOVE that.
I could keep typing for days. Days on end, I tell you, and you would be bored. I love the fact that they process the coconuts just the way they did in the old days, and local (to them, of course, no coconuts in the North East) families do the work. It comes in a nice glass jar, and I like to re-use those. I found that rubbing it into my skin worked wonders for my eczema, as well. (I'm NOT a doctor. I saw that on the internet and gave it a shot. It worked for me.)
A couple of snippets from the tropical traditions website I felt worth bringing over here-
"Virgin Coconut Oil is a food, and is one of the best cooking oils you can use. It has been a staple cooking oil for thousands of years in tropical climates. As a cooking oil, its chemical structure is kept in tact and therefore is resistant to mutations of fatty acid chains even when used in higher cooking temperatures, unlike most vegetable oils. Research shows that the medium chain fatty acids found in coconut oil boosts the body’s metabolism, raises body temperatures, and helps provide greater energy which can lead to weight loss"
So maybe that Hershey's Chocolate Disaster I made will make me skinny? Here's hoping!
Other things I made with the oil: Not Quite Carol's Chicken, coconut and sour cherry granola, and carrot and ginger soup
It's worth mentioning that my attempt at coconut oil buttercream frosting did not turn out. Perhaps if I had checked out free coconut oil recipes I would have had better luck. It did make a nice glaze though!

Coconut Oil is the best invention ever!!! I was playing a lively game of shuffleboard in Florida when an ornery Gator jumped out of the bushes and bit my leg clean off! Luckily I remembered I had a 12 ounce bottle of Coconut Oil in my man purse. I wrestled the Gator to the ground and poured a few ounces down his throat. He spit my leg back out and then was so kind as to even help me sew it back on! I was playing bridge that night! Bravo Coconut Oil I say!
